Syrian Salad

This delightful salad features finely chopped fresh vegetables, a trademark of middle eastern salads. Topped with feta cheese, cured olives, capers, and fresh parsley it is nearly a meal in itself!

Ingredients:
  • 1 Head Romaine Lettuce (optional)
  • 2 Large Tomatoes, chopped
  • 2 Scallions, chopped
  • 1 Cucumber, peeled, seeded, & chopped
  • 5 Radishes, chopped
  • 1 Red Bell Pepper, seeded & chopped
  • 1 Green Bell Pepper, seeded & chopped
  • 1 Small Red Onion, chopped
  • 3 oz Feta Cheese, crumbled
  • 1/2 Cup Fresh Parsley, chopped
  • 6-8 Calmata Olives
  • 2 Tbs. Capers (optional)
Dressing
Ingredients:
  • 1/4 Cup Olive Oil
  • Juice of 1 Lemon
  • 1 Tbs Wine Vinegar
  • 1 Clove Garlic, minced or pressed
  • Salt & Pepper to taste
  • Pinch Dried Mint
Directions:
  1. Rinse the Romaine (if using), tear into bite sized pieces, and place in a salad bowl.
  2. Combine the remaining vegetables with the dressing and pile on top of the lettuce.
  3. Sprinkle the Parsley, Feta, Olives and Capers over the salad and serve.

Note: If the lettuce is omitted, the salad will still serve 4-6 as a side dish.
